1、将鱼洗净撒干水分,在鱼头下部切一刀、鱼尾部同样,抽出鱼腥线。

2、鱼身改刀,切瓦块片。从鱼肉最厚的背鳍下刀,尽量不要切到鱼肚子,不然过油炸制的时候容易断开。

3、鱼身撒少许盐、料酒,腌渍20分钟。然后用鸡蛋一只、水淀粉、面粉适量,调成糊。使鱼身全部沾满芡糊,然后在扑一层干粉。O2hl S

4、锅内放油,要以没过鱼身为准。烧至6成热,手提鱼尾,用炒勺将油淋至鱼身,等外皮基本定性后,再将鱼放入锅内炸至熟捞出。开大火等油温升高后复炸一下,装盘备用。+@ys

5、将调料白醋、糖、料酒、盐、味精,加温水调匀成甜酸汁。锅内留底油烧热,导入甜酸汁,加番茄沙司炒匀后,加水淀粉勾芡,把炸制好的鲤鱼回锅挂汁,淋明油出锅装盘既可。6u-vv:l:]

楼主的做法与我的不一样,主要是我不喜欢番茄的味道,我是用的泡生姜,辣椒,蒜

牛,太有才了,我做别的什么菜都还可以,就是做<。)#)))≦ 做不好,要么有腥味,要么不入味,看了教程回去得练练

這種切法肉會不會很厚?肉厚了表皮焦了裡面還沒熟。還有就是切這么大塊吃的時候回麻煩么。
