中秋快到自己动手《冰皮月饼》超赞[68P]
中秋快到了,当然中秋吃得最多的就是冰皮啦~买现成的很贵,自己做,成本就低很多很多~自己也跃跃欲试,

于是买了材料和模具就动手做。Q l-bui#v4q6yAL
用了两种方法来做,三种口味,发现用澄粉的那种方法,#EFth:A;@:y,H
口感是比较好,而且很柔软,很滑很细腻,绿豆馅和奶黄馅

[/color]低粉45g 粟粉45g 吉士粉90g 砂糖160g 牛油45g Eft

炼奶60ml 牛奶540g 鸡蛋90g(三个左右)

1、将牛油隔水煮溶备用|

2、炼奶、牛奶拌匀

3、把粉类和砂糖混合,然后把蛋分三次加入

4、加入(1)(2)拌匀,过筛一次

6、蒸熟后放凉,然后搓滑即可d3s,[

去壳绿豆200g 砂糖100g 色拉油90ml;k'F;WGB$U
1、绿豆洗净,加适量水入锅煮透C

2、把煮透的绿豆用搅拌机搅成绿豆泥){7^4D8ps+_
3、把绿豆泥倒入锅中分次加入砂糖,分次加入色拉油,小火炒干即可

牛奶475ml 炼奶5汤匙 色拉油4汤匙 可可粉8g

2、牛奶加炼奶拌匀,倒入粉中搅拌均匀

4、入锅大火蒸30分钟至熟,待凉搓匀备用qTC7]2Y%A_}d+Q

炼奶油80g 牛奶400g 色拉油60g 绿茶粉8g

2、所有粉类混合,加入(1)搅拌均匀&HNxQk |$yX8b,B
3、搅拌好的面糊静置30分钟后入锅大火蒸30分钟至熟

1、冰皮冷却后,把冰皮分成25克的小挤子压扁(这个克数是用果冻模的,如果"u%Y4BD!qtg%x
用月饼模一个小挤子大概30克左右),放入馅料,包紧、收口、搓圆,在手上拍E@-V1PhI4i
点糕粉防粘

2、在模具里撒一点糕粉,让糕粉均匀粘在模上壁上,以方便脱模,然后把包好的S!Elui-z&L
冰皮面团放进模具用手掌压实r:^&q*P}\Yt
3、把月饼用力磕一下,再倒出来,就完成了3yN~g~&\bHL
4、月饼放入冰箱冰一下,口感更好哦8vR_5_ka&Wi
